NANA'S SPICY SALSA USING FRESH TOMATOES

Place (about) 8 med. tomatoes and 1 cup onion cut into small chunks in food processor or NINGA chop until desired consistancy, add 1 can chopped green chilies (or add other fresh peppers of your choice to tomato onion mixture before chopping)  blend in 1 package Nana's Spicy Salsa mix for med. salsa, or 2 packages for hot salsa.  (this salsa may have a green tint to it from the tomatoes if they aren't completely red).  If salsa is too thick add water until desired consistancy.  Chill for 20 minutes.  Store leftovers in fridge, use promptly or freeze.




NANA'S FAJITAS MADE WITH SMOKY CHIPOTLE RUB

1 1/2 LBS Chicken or Steak (I use flat iron)
3 Tbsp Smoky Chipotle Rub (divided)
Olive Oil
2 large green bell peppers or 4 mediun
1 1/2 onion

Place meat on flat surface. sprinkle with small amount of olive oil,  using the Smoky Chipotle Rub, rub seasoning on meat, repeat process for other side.   Preheat grill or if you are using skillet, wait until you are ready to cook  meat.   Allow to sit while you prepare peppers and onions.    Slice the vegetables into 1/4 inch strips and mix together.  Place meat on grill or preheat the skillet to med hi heat.  Cook meat until almost done, remove from skillet or grill..  Add 1 1/2 tbsp olive oil to skillet turn down heat to med. add vegetable mixture.    While vegetables are cooking slice meat into thin strips.   when vegetables are tender , add 1 1/2 tbsp chipotle rub and the meat.  Cook 5 minutes stirring often.
 


TORTILLA ROLL-UPS

This is a holiday favorite with my family

I Pkg Mexican Fiesta Dip Mix
1 pkg Cream Cheese softened
1 small can chopped black olives
1/3 Cup finely chopped onion
1 can chopped green chilies drained
1/3 c finely shredded cheddar cheese
4-6 10 in flour tortillas


Mix all ingredients except tortillas until well blended. Spread a thin layer of mixture on tortilla, roll up and chill until firm. Cut off ends of tortillas and then slice into approximatly 1/2 inch slices . Cover and chill until ready to serve.




PIMENTO CHEESE SPREAD/CHEESEBALL

1 Package Cheddar Cheese & Bacon dip mix
1 8 oz package cream cheese
1 small jar pimentos

Soften cream cheese. Mix dip mix and 1 jar pimentos (drained) together. For cheeseball wrap in wax paper and form into ball. Chill, remove wax paper and roll into some Parsley. For cheese spread, chill until firm. Use as a cracker spread




EASY BEEF & NOODLES

Easy crock pot recipe

1 pound stew meat or sirlion steak
1 Package French Onion Dip Mix
1 can Cream of Mushroom Soup
1/2 soup can water

Mix together all ingredients in crock pot, Cook on low until meat is tender, 3-4 hrs or until done.

Cook 12 oz Egg Noodles until tender, mix in to beef mixture.
Add 1 Cup Sour cream and salt and pepper if desired.

NANA'S SO GOOD BEEF STEW

Another quick and easy Crockpot recipe

1 pound stew meat or sirlion steak 
2 Packages French Onion Dip Mix 
2 cans Cream of Mushroom Soup
1 Soup can water
2-3 large potatoes
25 baby carrots
2 TBSP cornstarch
1 C Water

In crockpot mix the first 4 ingredients together until well blended. Peel and cut potatoes into chunks add to crockpot, along with baby carrots.  Cook 1 hour on high and then turn down to low and cook until beef is tender 3- 3.5 hours and then mix cornstarch and water together until blended, slowly pour into crockpot stir well until thickened and then serve.






GARLIC LOVER'S RANCH MASHED POTATOES

Boil 6-8 medium potatoes, either peeled or not, your choice. When tender, add 1/4 cup butter/margarine, approx. 1/2 cup milk. (may need a little more depending on size of potatoes), 1 package GARLIC LOVER'S RANCH DIP MIX. Mash potatoes with above ingredients. Add 1 1/2 cups shredded cheddar cheese, and salt and pepper to taste. mix well.   

BACON CHEDDAR SCALLOPED POTATOES

1 pg Bac cheddar dip mix
1/4 C butter
3/4 C milk
3 tb flour
1/4 c half & half or additional milk
3 C thinly sliced potatoes.
Melt butter in pan until bubbly, dd flour stirring until thickened add milk and half and half (or additional milk.) Cook until slightly thickened and hot. Place half of the potatoes in baking dish coated with non stick spray, add sauce and repeat. Bake at 400 degrees for 30 minutes or until potatoes are tender, let set 5 minutes before serving. SERVES 2-3.
